One Bowl Small Batch Chocolate Chip Muffins

I LOVE a good chocolate chip muffin! So simple, yet so tasty. Perfect for an on the go breakfast, or mid afternoon pick-me-up. The problem is, I do not need 12 full size muffins in the house as I will devour them all. My small batch chocolate chip muffin recipe is the perfect compromise. It makes four delicious chocolate chip muffins. And as an added bonus, you only need one bowl for the entire recipe!

Making the small batch chocolate chip muffins

Step one, mix ingredients in a bowl. Step two, bake. It really is that simple! Well, almost…. the order that you mix the ingredients is important, as is the way you mix them. Start by mixing the wet ingredients and brown sugar in a medium bowl until well combined. Next add the flour and baking powder and stir until just combined. You do not want to over mix the batter as this will lead to dense muffins. It is OK at this stage if there are some small pockets of flour as they will incorporate in the next step. Next fold the chocolate chips into the batter until evenly distributed. Again, be mindful to mix the batter as little as possible.

Finally, add the batter to four greased muffin pan holes and bake at 400°F for 15-17 minutes or until golden. These muffins bake at a slightly higher temperature to help give them a nice golden exterior. It is almost like biting into a chocolate chip cookie muffin. Easy right?! You can have fresh, small batch of delicious chocolate chip muffins in less time than it takes you to drive to and place an order at your local coffee shop! Unless of course you live right next door to the coffee joint……

What kind of chocolate chips should I use?

I think milk chocolate chips work best in this recipe. I like the sweetness they provide over a semi-sweet or bittersweet chip. They also have a smoother texture than chocolate chips with a higher cocoa ratio. I enjoy this smooth texture in my muffins. Plus milk chocolate is my favorite chocolate. I almost exclusively use Ghirardelli chocolate when I bake.

This recipe would certainly work with either semi-sweet, bitter sweet or even white chocolate chips as well. You could even consider adding nuts, or dried fruit to the mix. White chocolate, cranberry muffins anyone? Yum! If you do decide to add an extra ingredient to the mix, I would recommend reducing the quantity of chocolate chips by the same volume you add of the new ingredient. These small batch muffins are already LOADED with chocolate chips and adding another ingredient may over flow the pan. Regardless of what type of chocolate you decide to use I highly recommend sprinkling a few extra chips on top of the batter before it goes into the oven.

  1. Preheat oven to 400F

  2. Grease four holes in a muffin pan and set aside

  3. Mix butter, brown sugar, egg, sour cream and vanilla in a medium bowl until well combined

  4. Add flour and baking powder and stir until just combined

  5. Fold in chocolate chips being mindful not to over mix the batter

  6. Add batter to prepared muffin pan and bake for 15-17 minutes or until golden
