The Best Fresh Strawberry Buttercream

I love all the fresh berries that are so readily available at this time of year! We are fortunate enough here in California to have access to strawberries year round, however there is just something about picking up fresh strawberries from a road side stand that makes them taste so much better! This fresh strawberry buttercream makes perfect use of fresh berries and tastes amazing!

What do you need to make fresh strawberry buttercream?

This recipe is SUPER simple and requires only three ingredients!

  1. Butter (duh)
  2. Powdered sugar
  3. Fresh strawberries (also duh)

That’s it! So simple! Most people have these ingredients on hand during fresh berry season. But, if you do not the good news is that they are easy to find at your local store.

Making the buttercream

The buttercream is very easy to make and takes less than 5 minutes. After you have pureed the strawberries, beat the room temperature butter until smooth and creamy. Next add the powdered sugar and 1/2 of the pureed strawberries and mix on LOW speed until combined. Do not start the mixer on high or you will end up with a face full of powdered sugar. Once the powdered sugar is combined with the butter add the remaining strawberry puree until the desired consistency is reached.

How do you puree the strawberries?

The easiest way to puree the strawberries is with a blender. Simply add the strawberries and blend for 15-30 seconds until smooth. If you do not have a blender you can always use a food processor and pulse the berries until smooth. If you do not have a blender or food processor you can also use an electric hand beater to puree the berries. This method will take a little longer than a blender or food processor and will also result in a ‘chunkier’ puree. If you are planning to use a piping bag to apply to buttercream I would avoid this method if possible. The chunks of berry may get cause blockages in the piping tip.

This buttercream is the perfect compliment for any cake or cupcakes you want to add a fresh strawberry pop to. My fresh strawberry cupcakes are the PERFECT vessel for this buttercream! In fact, I created this buttercream just for these cupcakes. This buttercream would also be the perfect topping for a chocolate cake or cupcake. My rich chocolate cupcakes with this buttercream would be AMAZING! Strawberries and chocolate anyone? Yes please! You could even do a double berry cupcake and pair this buttercream with my fresh raspberry cupcakes. YUM!
