Air Fryer Baked Brie with Cranberry and Walnuts
If you’ve been around long enough you know that cheese is my favorite food. I don’t know about you, but one of my favorite ways to enjoy cheese is when it is melty and gooey. This air fryer baked brie with cranberry and walnut compote is the perfect way to enjoy gooey cheese!
Air fryer baked brie ingredients
- Fresh cranberries
- Honey
- Orange zest
- Chopped walnuts
- Puff pastry
- Brie wheel
- Egg (for egg wash)
Making the cranberry walnut compote
Making cranberry compote or cranberry sauce is SUPER easy! Once you make your first batch I am sure you will never go back to store bought. To make the compote add the honey and cranberries to a small saucepan and cook over medium heat for 6-8 minutes until the cranberries start to pop and soften. Remove the saucepan from the heat and stir in the orange zest and walnuts. Let the compote cool to room temp before moving onto the next step.
The compote can be made up to three days in advance and stored in an air-tight container in the fridge.
Assembling the brie
This is probably the most complex step (which is not very complex at all). The key to this step is to avoid handling the puff pastry. Over-handling the pastry will cause the layers of butter in the pastry to melt resulting in a soggy flat pastry once baked. First, you want to ensure the puff pastry has come to room temperature. Gently unfold the pastry. If it does not unfold easily give it a few more minutes to defrost. If the pastry tears at all during this step gently press it back together with damp fingers.
Next you want to lightly roll out the pastry on a floured surface. The goal here is to increase the size of the pastry about 25%. This will reduce the thickness of the pastry when cooked. In my opinion this creates a better cheese to pastry ratio. Once the pastry is rolled out cut the sheet into a rough square with a sharp knife.
Transfer the pastry sheet to a small plate allowing the excess to hang over the sides. Place the cooled compote in a pile in the center of the plate. Be mindful the pile of compote is not larger than your wheel of brie. Place the brie on top of the compote. Gently fold the edges of the pastry up over the brie wheel and gather to form a parcel. Be sure to press the seams together well to seal the brie. This will be the bottom of the baked brie, so it does not have to be perfect.
The assembled brie can be made up to 24 hours in advance and stored in an air tight container in the fridge.
Baking the brie in the air fryer
When you are ready to bake the brie make an egg wash by beating the egg in a small bowl. Apply the egg wash to the top and sides of the pastry using a pastry brush. Bake the brie in a pre-heated air fryer at 400° F for 12 minutes. Enjoy immediately.

Combine the cranberries and honey in a medium saucepan and cook over medium heat, stirring frequently until the cranberries start to pop and soften. About 6-8 minutes

Remove the saucepan from the heat and stir in the orange zest and walnuts

Let the cranberry mixture cool completely to room temperature

While the cranberry compote is cooling allow the frozen puff pastry to defrost at room temperature

Once the puff pastry has defrosted gently unfold the sheet. Roll the pastry out on a floured surface until the size increases around 25%

Cut the rolled out pastry into a rough square and place over a small plate letting the excess hang over the sides of the plate

Add the cooled cranberry compote in a pile to the center of the plate ensuring the pile is no wider than the wheel of brie

Place brie on top of cranberry compote and gather puff pastry around the cheese to create a parcel. Press the pastry seams together to seal the parcel

Turn the pastry covered brie over so the seams are on the bottom

In a small bowl beat the egg to create an egg wash and brush on the top and sides of the pastry

Cook in a preheated air fryer at 400F for 12 minutes. Serve immediately

This sounds delicious! I love brie, but I've never put it in the air fryer. I will have to give it a try!
