Easy Apple Cinnamon Pancakes
Pancakes are my husbands favorite breakfast food. Every time we eat out for breakfast he orders them without fail! Once in a while I will make them for him at home. My easy apple cinnamon pancakes are my go-to recipe. They are easy to put together and we always have the ingredients in house, so no pre-planning is required. BONUS! My apple of choice is Granny Smith so we always have them in our fruit bowl which works our perfectly for pancake mornings.
Apple cinnamon pancake ingredients
- Milk (whole milk recommended)
- White vinegar
- All purpose flour
- Granulated sugar
- Baking powder
- Baking soda
- Cinnamon
- Melted butter
- Egg
- Vanilla extract
- Apple
Milk and vinegar
Adding acid such as vinegar to milk creates a great buttermilk substitute. Buttermilk is a key ingredient in a number of recipes as it adds lightness and tenderness to the batter. Once the acid in the buttermilk makes contact with a chemical leavener such as baking powder or baking soda a reaction occurs resulting in a lot of tiny bubbles. This reaction is what gives the batter the light fluffy texture. I prefer to use white vinegar in my milk, however lemon juice works equally well. Let the milk and acid sit for at least five minutes at room temperature before adding to the other ingredients.
Flour
I use all purpose flour in these pancakes as it is the most common flour found in pantries. Whole wheat flour would also be great in these pancakes and give a more rustic, earthy taste and texture. I have not yet made this pancake recipe with almond flour for a gluten free alternative, however according to Highkey you can substitute AP flour for almond flour 1:1. You will just need to add an additional egg to help the batter bind.
Sugar
Similar to the all purpose flour, I have used granulated sugar in these pancakes as it is most commonly found. Brown sugar would also be great in these pancakes. The richer flavor would play off the apples and cinnamon nicely and great a rich warm flavor.
Apples
I always make my apple cinnamon pancakes with Granny Smith apples. I like their tart taste and firm texture. Granny Smith Apples also hold up well to cooking and baking. Other crispy or crunchy apples such as gala, honey crisp or golden delicious would be good alternatives if you can’t find Granny Smith. I like to finely chop my apple, however grating them will also work.
