
Are you team fudgy, team chewy or team cakey bronwies? I’m team fudgy ALL DAY! The kind of brownies that you cannot test the doneness with a toothpick because it will come out dirty even when done. My favorite brownies are the Nigela Lawson’s Triple Chocolate Brownies and my ALL TIME favorite easter candy is Cadbury mini eggs so I decided to combine the two and make mini egg brownies!
Mini Egg Brownie Ingredients

- Semi-sweet chocolate
- Salted butter
- Egg
- Caster or granulated sugar
- Vanilla extract
- Flour
- Cadbury mini eggs
Making the mini egg brownies
These brownies are super easy to put together and will make you the hero with anyone you share them with. Start by melting the chocolate and butter over medium heat until smooth. Then set aside too cool. Next lightly beat the egg, sugar and vanilla. Be mindful not to beat the eggs too vigorously, you do not want to add too much air into the batter.

Add egg mixture to the cool chocolate and whisk to combine. Then fold in the flour until just combined. Finally fold in 3/4 of the chopped mini eggs, pour into a prepared pan, top with remaining 1/4 of chopped eggs and bake!

Baking the brownies
It is best to bake the brownies in a parchment lined pan. This will make it easier (and cleaner) to remove the baked brownies from the pan. These brownies will bake for 30-35 minutes. You will know the brownies are done when the center of the brownies no longer jiggle and the top is dry and starting to crack. The tooth pick test will not work with these fudgy brownies. If you insert a tooth pick into the center of these brownies and it comes out clean you have definitely overcooked your brownies! Let the brownies completely cool in the pan before removing and cutting.

Chopping the mini eggs
The easiest way to chop the mini eggs into pieces is with a meat mallet or rolling pin. Add the mini eggs to a large ziplock bag and smash into pieces with a meat mallet of rolling pin until pea size pieces appear. Fudgy Cadbury Mini Egg Brownies

Preheat oven to 350F

Line an 8x8 pan with parchment paper and set aside

Melt chocolate and butter in a large pot of medium-low heat and set aside to cool

In a separate bowl lightly beat eggs, sugar and vanilla

Add egg mixture to cooled chocolate mixture and whisk to combine

Fold flour into chocolate mixture until just combined

Fold 3/4 cup of chopped mini eggs into brownie batter and turn into prepared pan

Sprinkle remaining 1/4 cup of mini eggs over top of the batter

Bake for 30-35 minutes or until batter is no longer jiggly in the center

Let brownies cool completely in pan before removing to cut
