Easy Piña Colada Popsicles

Today is national piña colada day and what better way to celebrate with these easy piña colada popsicles! It’s is going to be close to 100°F here in Gilroy today and these delicious popsicles will go down a treat! While there is some dispute around when the piña colada there is no dispute that it originates from Puerto Rico. Regardless of when the original cocktail was created, I am glad it was as it lead to these tasty cool treats!

Pineapple

Fresh, frozen or canned all work for these popsicles. I like getting the fresh pre-cut pineapple from the produce department at my local Safeway. If using canned pineapple be sure to drain the juice and weigh the pineapple only. If using frozen pineapple defrost prior to adding to the blender and drain the juice.

Coconut milk

Canned full fat coconut milk is recommended for this recipe as it has a more intense coconut flavor. You can use lite coconut milk if you like, but the flavor will be less intense and the texture less creamy.

White rum

A traditional piña colada contains white rum. I used Malibu in my piña colada popsicles. I like the enhanced coconut flavor Malibu adds. Technically, Malibu is considered a coconut liqueur, and not a rum due to its lower ABV. If you decide to use Malibu over a true white rum such as Bacardi you can get away with adding a splash more. I recommend 1/4-1/2 cup of rum depending on how much of a kick you want.

Granulated sugar

The granulated sugar adds a touch of sweetness.

Lime juice

The squeeze of fresh lime juice is optional, but helps to elevate the tropical flavor.

Making the popsicles

These popsicles are super easy to make. Simply add all of the ingredients to your blender and whizz until smooth. Pour the blended mixture into you popsicle mold and freeze for 3-4 hour or until set. EASY RIGHT!

  1. Add all ingredients to a blender and blender until smooth

  2. Pour blended mixture into popsicle mold and add wooden sticks 

  3. Freeze for 3-4 hour or until completely frozen

Notes

If using canned pineapple drain the juice before weighing pineapple

If using frozen pineapple thaw before using and drain juice
