Homemade Strawberry Honey Vinaigrette

Strawberry season is here and I LOVE it! One of my favorite ways to eat strawberries is in a salad with goat cheese, red onion and whatever cooked proteins I have in my fridge. My favorites are bakes salmon and grilled chicken thighs! I probably eat this salad a minimum of five days a week and it never gets old. My husband and I now refer to it simply as ‘fav’ (short for favorite). He doesn’t like or eat it, but that just means more for me. One of my favorite dressings to have with this salad is homemade strawberry honey vinaigrette.

What do you need to make strawberry honey vinaigrette?

  • Strawberries (duh!)
  • Honey (obviously)
  • Dijon mustard
  • Vanilla extract
  • Red onion
  • Soy sauce
  • Rice vinegar
  • Black pepper
  • Canola oil
Emulsifying ingredients

You have probably heard the term emulsifying before which is the process of combing oil and water (or in this case vinegar) into a uniform substance. As we know oil and water do not mix together well or easily. There are however ingredients that can be added to a recipe to ‘trap’ small particles of oil or water to help vinaigrettes come together. These ingredients are know as emulsifiers. Food 52 has a great article about the science of emulsifiers that refers to them as ‘your sauce’s peacekeepers’. In this recipe both the mustard and honey act as emulsifiers that help keep the vinaigrette cohesive.

The process

Vinaigrette is very simple to make as long as you do not rush the process. All you need is a simple kitchen blender. Simply blend all of the ingredients except the oil until smooth. Next with the blender running on the lowest speed possible SLOWLY pour in the oil. We all know that oil and vinegar (the two main ingredients in this recipe) don’t mix well. However, if you take your time introducing them they are more likely to be friends and stick together. Oil needs time to combine with the emulsifying ingredients we discussed above. Adding the oil too quickly will cause it to stick to itself rather than combine with the other ingredients. It took me around 3 whole minutes to slowly add the 3/4 cup of oil into this vinaigrette recipe.

Description

This strawberry honey vinaigrette is thick and full of bright flavor. It is easy to whip up in less than 5 minutes and pairs perfectly with your summer berry salads. An instant favorite!

  1. Blend all ingredients except the canola oil until smooth (about 45 second to 1 minute)

  2. With the blend running at its lowest speed slowly drizzle in the oil. This process should take around 3 minutes if done correctly

  3. Once fully combined pour into an air tight jar and store in the fridge for up to two weeks

Notes

This recipe yield 1 1/2 cups of vinaigrette
