Description

These easy no bake margarita cheesecake bars are creamy and tart with a little kick of tequila.

Ingredients
    Crust
  • 2 cups graham cracker crumbs (approximately 14 crackers)
  • 2 tablespoons brown sugar (packed)
  • 6 tablespoons salted butter (melted)
  • Cheesecake Layer
  • 1/2 cup heavy cream
  • 16 ounces cream cheese (2 blocks, room temperature)
  • 1/2 cup granulated sugar
  • 1 tablespoon lime zest (approx. 1 lime)
  • Tequila Lime Layer
  • 3 ounces lime jello (1/2 packet)
  • 3/4 cups boiling water
  • 1 cup cold water
  • 3 tablespoons tequila
Instructions
    Crust
  1. Line base and sides of a 8x8" pan with parchment paper and set aside

  2. Mix graham cracker crumbs, sugar and melted butter until well combined

  3. Evenly spread crumb mixture into prepared pan, pressing down to pack the crust

  4. Cheesecake Layer
  5. In a medium bowl whip heavy cream with a hand or stick mixer until stiff, then set aside

  6. In a separate bowl beat cream cheese, sugar and lime zest until light and fluffy, about 3 minutes

  7. Pour cheesecake filling over crust using a spoon or spatula to evenly spread the mixture

  8. Chill the cheesecake in the fridge until set. Minimum of 3 hours, but preferably overnight

  9. Tequila Lime Layer
  10. In a medium bowl mix lime jello and boiling water until completely dissolved, approximately 3 minutes

  11. Add cold water and tequila to jello mixture and stir to combine

  12. Let jello mixture cool then pour over the cheesecake layer

  13. Return cheesecake to fridge until jello is set, approximately 3 hours

  14. Once set remove the cheesecake from the pan and use a sharp knife to cut into squares
