Preheat oven to 350 F
Grease or spray a 9" pie pan or baking dish and set aside
In a large bowl beat eggs, milk and oil until combined
Add flour, salt, pepper and nutmeg and mix until combined
Add zucchini, onion and cheese and stir to combine
Pour egg mixture into prepared pan and bake for 45-55 minutes or until cooked through
