Description

The best fudgy mini egg brownies! Rich chocolate brownies with chunks of Cadbury mini eggs.

Ingredients
  • 185 grams salted butter (13 tbsp)
  • 170 grams bitter sweet chocolate
  • 3 large eggs
  • 175 grams bakers sugar
  • 1/2 teaspoon vanilla extract
  • 105 grams all purpose flour
  • 1 cup Cadbury mini eggs (roughly chopped, divided)
Instructions
  1. Preheat oven to 350F

  2. Line an 8x8 pan with parchment paper and set aside

  3. Melt chocolate and butter in a large pot of medium-low heat and set aside to cool

  4. In a separate bowl lightly beat eggs, sugar and vanilla

  5. Add egg mixture to cooled chocolate mixture and whisk to combine

  6. Fold flour into chocolate mixture until just combined

  7. Fold 3/4 cup of chopped mini eggs into brownie batter and turn into prepared pan

  8. Sprinkle remaining 1/4  cup of mini eggs over top of the batter

  9. Bake for 30-35 minutes or until batter is no longer jiggly in the center

  10. Let brownies cool completely in pan before removing to cut
