Small Batch Nutella Swirled Banana Muffins

This easy one bowl recipe make four delicious Nutella swirled banana muffins. 

  • 1 large over ripe banana
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tablespoon canola oil
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 8 teaspoons nutella (softened)
  1. Preheat oven to 350F

  2. Grease or butter four hole in a muffin pan and set aside.

  3. In a medium bowl mash banana with a fork or masher until it reaches a pureed texture.

  4. Add sugar, egg, oil and vanilla to mash banana and mix to combine.

  5. Add flour, baking soda, baking powder and salt to wet ingredients and mix until just combined. 

  6. Microwave the Nutella for 30-45 seconds until smooth and can slowly drip from a spoon (do not microwave for more than 60 second). 

  7. Scoop the muffin batter into grease muffin holes filling 1/2 way. 

  8. Drizzle 1 teaspoon of Nutella over the muffin batter. Use a toothpick to pull through the muffin batter and Nutella to create a swirled pattern. 

  9. Top the muffins with remaining batter filling holes 3/4 full. Add another 1/2 teaspoon of Nutella and repeat the swirling process.

  10. Bake for 12-15 minutes or until toothpick inserted into the center comes out clean.

  11. Allow muffins to cool for 3-5 minutes in muffin pan before transferring to a wire rack to cool.
