Description

This simple carrot and apple muffin topped with sweet and crunch streusel is the perfect choice for quick breakfast or a snack

Muffins
  • 1 large egg
  • 1/4 cup brown sugar (packed)
  • 3 tablespoons canola oil
  • 3 tablespoons plain Greek yogurt
  • 1/2 teaspoon vanilla extract
  • 2/3 cups all purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/3 cup grated fuji apple (unpeeled, approx. 1/4 large apple)
  • 1/3 cup grated carrot (approx. 1/2 medium carrot)
  • Streusel
  • 2 tablespoons brown sugar (packed)
  • 2 tablespoons granulated sugar
  • 2 tablespoons all purpose flour
  • 1/4 teaspoon cinnamon
  • 1 tablespoon salted butter (cold, cut into small cubes)
Instructions
    Muffins
    1. Grease or line (5) holes in your muffin pan
    2. Preheat oven to 350 F
    3. Add egg, brown sugar, oil, yogurt and vanilla to medium bowl and mix to combine
    4. Add flour, baking powder, baking soda, cinnamon and nutmeg to wet ingredients and stir until just combined, do not overmix
    5. Add grated carrot and apple to mixture and fold until combined (mixture will be thick)
    6. Fill the prepared muffin pan to just below the top of the muffin hole (this recipe is dense so you want to fill the holes more than a regular muffin)
  1. Streusel
    1. Combine sugars, flour and cinnamon in a small bowl 
    2. Add cold cubed butter and cut into mixture using a fork or pastry cutter until it resembles course crumbs
    3. Top muffin mixture with streusel and bake for 18-22 minutes
