Apricot Magic Bars

Description

These apricot magic bars are so easy to put together and so full of flavor they are sure to be a regular in your baking rotation

Ingredients
  • 2 1/2 cups ginger snaps cookie crumbs (approx. 3/4 of 12oz box of cookies)
  • 8 tablespoons melted salted butter (1 stick)
  • 1 can condensed milk (14oz)
  • 1 cup chopped dried apricots
  • 1 cup white chocolate chips
  • 1 cup sliced almonds
  • 1 cup sweetened shredded coconut
Instructions
    1. Lightly spray a 9 x 13 pan or line with parchment and set aside
    2. Preheat oven to 325 F
    3. Mix gingersnap crumbs and melted butter until well combined and firmly press into baking pan
    4. Slowly drizzle condensed milk over crust in pan until evenly distributed (do not use spoon or spatula to spread)
    5. Mix apricots, white chocolate, almonds and coconut in a separate bowl
    6. Evenly sprinkle toppings over condensed milk layer
    7. Bake for 25 minutes or until golden turning the pan half way through
    8. Let cool at room temperature for AT LEAST 2 hours before cuttingĀ 
Notes

Store in an air tight container at room temperature for up to a week

Wrap well in plastic wrap and place in Ziploc bag to store in freezer for up to three months
