Description

Anzac biscuits are a sweet oat based biscuit popular in New Zealand and Australia. Made with old fashioned oat, shredded coconut and golden syrup these biscuits have a delightful chewy bite with deep golden flavors.

Ingredients
  • 1/2 cup old fashioned oats
  • 1/2 cup shredded coconut
  • 1/2 cup light brown sugar (packed)
  • 1/2 cup all purpose flour
  • 2 tablespoons golden syrup
  • 63 grams salted butter
  • 1/4 teaspoon baking soda
  • 1 tablespoon boiling water
  • 125 grams chocolate (optional)
Instructions
  1. Preheat oven to 350F

  2. Line a large cookie sheet with parchment paper and set aside

  3. In a large bowl mix oats, coconut, brown sugar and flour and set aside

  4. Melt together golden syrup and butter in a small sauce pan over medium-low heat

  5. Add boiling water to baking soda and stir till dissolved

  6. Add baking soda to butter mixture and stir to combine

  7. Add wet ingredients to dry ingredients and stir until combined

  8. Scoop 1 1/2 tablespoon sized balls of dough onto lined cookie sheet ensuring enough space between each ball for spread

  9. Lightly press the tops of the dough balls flat with a fork or bottom of a glass

  10. Bake for 15 minutes until golden

  11. Let biscuits cool completely on cookie sheet

  12. Optional: Melt chocolate and drizzle over cooled biscuits
