Afghan biscuits are a kiwi classic! A soft and crunchy biscuit topped with sweet chocolate icing and walnut. The perfect combo of texture and chocolate flavor.
Preheat oven to 350F
Sift or whisk together flour and cocoa powder and set aside
In a large bowl cream butter and sugar with a stand or hand mixer until light an fluffy
Mix flour and cocoa powder into creamed mixture
Mix in cornflakes until combined
Place 1 1/2 tablespoon size balls of dough onto a parchment lined cookie tray 2" apart. Lightly press down on the biscuits to flatten
Bake for 15 minutes. Let biscuits cool for 5 minutes on the tray before transferring to a wire rack to finish cooling
When biscuits are completely cooled make the basic chocolate icing. Top each biscuit generously with icing and sprinkle with walnuts
