Description

Afghan biscuits are a kiwi classic! A soft and crunchy biscuit topped with sweet chocolate icing and walnut. The perfect combo of texture and chocolate flavor.

Ingredients
    Biscuits
  • 1 1/4 cup all purpose flour
  • 1/4 cup cocoa powder
  • 7 ounces butter (softened to room temperature)
  • 1/2 cup granulated sugar
  • 2 cups cornflakes
  • Basic Chocolate Icing
  • 2 cups powdered sugar
  • 2 tablespoons cocoa powder
  • 1 tablespoon butter (melted)
  • 1/2 teaspoon vanilla extract
  • 3 1/2 tablespoons hot water (approx.)
  • halved or chopped walnuts (for topping)
Instructions
  1. Preheat oven to 350F

  2. Sift or whisk together flour and cocoa powder and set aside

  3. In a large bowl cream butter and sugar with a stand or hand mixer until light an fluffy

  4. Mix flour and cocoa powder into creamed mixture

  5. Mix in cornflakes until combined

  6. Place 1 1/2 tablespoon size balls of dough onto a parchment lined cookie tray 2" apart. Lightly press down on the biscuits to flatten

  7. Bake for 15 minutes. Let biscuits cool for 5 minutes on the tray before transferring to a wire rack to finish cooling

  8. When biscuits are completely cooled make the basic chocolate icing. Top each biscuit generously with icing and sprinkle with walnuts
